Introducing Rathfinny 2019 Blanc de Noirs
Proudly served by Sommelier Remi Cousins at Le Gavroche and Sommelier Maria at Da Terra, our signature Sussex Sparkling is made from 81% Pinot Noir and 19% Pinot Meunier and has spent 36 months in bottle.

Sommelier Remi Cousins, Le Gavroche
Two Michelin-starred restaurant, Le Gavroche has proudly served Rathfinny since its first release. The restaurant however dates back to 1967 when it was the only French restaurant of its kind in London – offering the very best of classical French food with the highest standards of cooking and service. It has become a London institution maintaining the excellence for which it has always been famous. Set to close in 2024, the restaurant’s legacy and name will live on.
Maria and Rafael, Da Terra
Da Terra opened in January 2019 and after 8 months of hard work and dedication, Da Terra Gained its first Michelin star. Following a very eventful 2020, they were then awarded a second star in the Michelin Guide of 2021. Da Terra offers exceptional blind tasting menus lead by Chef and Owner Rafael with perfectly matched wines pairings recommended by Head Sommelier and Wine Buyer Maria, such as Rathfinny Blanc de Noirs.
Introducing Rathfinny 2019 Rosé
Proudly served at Michelin-Starred restaurant, Woven by Adam Smith, our expressive Sussex Sparkling, is made from 60% Pinot Noir, 22% Chardonnay and 18% Pinot Meunier. Rose gold in colour, the delicate fine bubbles yield a creamy palate of clementines and kumquats, that give way to raspberries and strawberries, with a cleansing quince finish. Pair with Asian flavours such as Thai chilli crab and duck and ginger spring rolls or berry-based like a strawberry soufflé and cranberry trifle.

Culinary genius Adam Smith is executive Head Chef at Woven by Adam Smith. Set in the heart of the Berkshire countryside this Michelin-starred restaurant is a tribute to exceptional British produce and the stories behind each ingredient. Adam perfectly pairs our new Rosé 2019 with a Cornish Crab dish with preserved radish, nashi pear and a Thai green sauce.

Stylish wine bar and shop, The Drop, has cemented itself as one of the best wine bars and shops in London. You can spend some time browsing their impressive wine collection including Rathfinny, hand-selected by Hayley. Introducing Rathfinny 2019 Classic Cuvée
Proudly sold in the historical Oxford Wine Company, our classic Sussex Sparkling is a blend of 44% Pinot Noir, 41% Chardonnay and 15% Pinot Meunier, made in the Traditional Method and aged for 36 months in the bottle. Displaying a honeyed lemon shade, this wine opens with a welcoming scent of red apple skins, transitioning into a luxurious palate of lemon meringue richness and a finish highlighted by the essence of red berry fruit.

The historic town of Oxford is home to the multi-award-wining Oxford Wine Company which was crowned the Best Independent Wine Merchant in the UK by Harpers Wine this year.
The shops have seen many iterations over the decades, from a humble garage to the three shops around Oxford we see today. With more than 2,000 wines and spirits in their archive, there are many treasures to be found, including our Rathfinny Sussex Sparkling wines.

Tasting Room Assistant Manager, Silvia Viramontes
Dynamic duo, Chef Chris Bailey and Tasting Room Assistant Manager, Silvia Viramontes work seamlessly together to ensure the best service and attention across every aspect of the Tasting Room restaurant.
Silvia brings years of fine dining experience to Sussex from the States, having worked in high end restaurants and acclaimed wine distributors such as The Henry Wine Group in California. Silvia brings her wealth of wine knowledge to the restaurant to train staff and works closely with Chris to develop our wine lists and pairing menus.
Chef Chris Bailey
Chris trained at Westminster College and has worked in some top restaurants across London and Spain. His years of experience culminated in being awarded a Michelin Star at The Black Rat in Winchester. Chris joined the Rathfinny team in 2018 to launch the Tasting Room restaurant and he now manages all dining experiences across the Estate.
Inspired by seasonal produce and conversations with farmers, Chris has created a distinct style of cooking, synonymous with Rathfinny quality.
About the 2019 Vintage
The 2019 growing season started early. We experienced record breaking temperatures during late July and a very warm August, but a wet end to September and October. Whilst harvest was soggy, the fruit prevailed and produced some lovely wines that pay homage to the long hot summer.
New 2019 vintages
Our low-intervention, Traditional Method, Vintage Sussex Sparkling wines are a true expression of our terroir. Produced from hand-harvested grapes that are whole-bunch pressed and patiently matured, on lees and in bottle to develop rich, autolytic notes, with a low dosage that emphasises the purity of our fruit. We aim to preserve the wonderful natural flavours of the grapes with as little intervention as possible.
