Why Michelin-Starred Restaurants Choose Rathfinny

Michelin-starred restaurants choose Rathfinny for the same reasons chefs prize great ingredients: quality, provenance and sustainability. Crafted in the traditional method from the finest fruit, Rathfinny’s vintage Sussex Sparkling wines are produced in accordance with the Sussex PDO and are recognised for their precision, balance and gastronomic style.

As a single-site grower-producer, we oversee the entire journey from grape to glass at our coastal estate near the Seven Sisters, where chalk soils and sea breezes shape the wines’ natural freshness and minerality. Made with low dosage and a low-intervention philosophy, the cuvées express terroir with clarity, while Rathfinny’s B Corp status resonates with restaurants committed to responsible sourcing.

Lita Bistro, Marylebone. Serving Rathfinny 2019 Classic Cuvée

In the heart of Marylebone, Lita — short for abuelita — brings Mediterranean warmth and fire-led cooking to one of London’s most elegant neighbourhoods. The boldly flavoured, produce-driven menu draws inspiration from southern Europe while showcasing superb British ingredients, from Scottish lobster to Cornish turbot.

Plates are designed for sharing: dry-aged Devon duck with beetroot and kumquat, charcoal-grilled seafood and sauces designed for mopping up with bread. It’s the perfect spot for a long lunch with relaxed, wholesome dishes, and a glass or two of something sparkling.

Rathfinny Classic Cuvée 2019 is Lita’s house pour; its freshness and aperitif profile cuts beautifully through smoky dishes and rich, savoury sauces.

Oma, Borough Market. Serving Rathfinny 2019 Brut Rosé

Tucked above Borough Market, OMA channels the serenity of the Greek islands through minimalist plates packed with sun-washed Mediterranean and bold Levantine flavours. The buzzing dining room overlooks one of London’s most iconic food destinations, while a 400-strong wine list leans into saline, coastal styles that echo life by the sea.

Expect thrilling sharing dishes: spreads and warm breads, tuna prepared in multiple ways, charcoal grilled meats and seafood, plus stand-outs such as spanakopita and giouvetsi. The pacing from the kitchen is spot on, and the atmosphere hums with energy from lunch through to late evening.

Rathfinny Rosé 2019 is poured by the glass: a natural partner to grilled seafood, herbs and citrusy dishes, bringing Sussex seaside freshness to a restaurant fast gaining cult status.

Woven By Adam Smith, Coworth Park. Serving Rathfinny Blanc De Blancs 2019

Set within the rolling Berkshire countryside near Ascot, Woven by Adam Smith is a celebration of outstanding British produce and classical technique. Awarded its first Michelin star in 2023 within a year of opening, the restaurant reflects Adam Smith’s Roux Scholar pedigree and nearly a decade working under John Williams at The Ritz, now reinterpreted through his own elegant, contemporary lens.

Dishes showcase meticulous plating, depth of flavour and seasonal ingredients, all delivered in a welcoming space that feels luxurious without over-formality.

We’ve been long-term collaborators with Adam and the Woven team, hosting Wine Dinners and being the exclusive sparkling wine for their gorgeous summer terrace, TIDE.

Rathfinny Blanc de Blancs 2019 sits perfectly within this refined setting, its precision, minerality and long finish echoing the restaurant’s focus on purity and balance.

Kol, Marylebone. Serving Rathfinny Blanc De Noirs 2020

Mexican soul, British ingredients’ is the guiding principle at KOL. It’s a combination that delivers one of London’s most mouth-watering and boundary-pushing dining experiences, as acknowledged with a Michelin Star.

Led by Santiago Lastra, the kitchen reimagines traditional Mexican flavours through hyper-seasonal British produce, combining boldness with technical finesse and memories of Mexico.

Menus evolve constantly, but signatures such as the langoustine taco with smoked chilli and sea buckthorn reveal KOL’s talent for contrast, balance and surprise. Familiar foundations — corn masa, mole, ceviche — are honoured and transformed, while the open kitchen reinforces the restaurant’s feeling of warmth, openness and hospitality.

The wine list champions up-and-coming regions, meaning Sussex finds a place. Our signature sparkling, Rathfinny Blanc de Noirs 2020, is by the glass at the start of 2026. Its structurde, red-fruit depth and savoury edge stand up beautifully to smoke, spice and richly layered dishes.
